Luke Skywalker trained Grogu in the ways of the Force, but gave him a choice: become a Jedi or return to Din Djarin to become a Mandalorian. The orphan chose the latter and accompanied Din Djarin on his new adventures in the galaxy far, far away. At the end of season 3, however, he was formally adopted by Mando.
Grogu will train as a Jedi, then he becomes the second (?) Mandalorian Jedi ever, but even more powerful, more powerful than Yoda. Grogu probably would've just become a great Jedi if he didn't meet Djarin, but because of the chance meeting, he found out he's got talent for Mandalorian-ing too.
Later on though, Skywalker sensed that Grogu's heart was not in learning the Jedi path, thus he subsequently gave in to his attachment to the Mandalorian and was returned to him upon which he would start to train to become a Mandalorian himself.
Grogu rejected Luke Skywalker's offer to train him in the Jedi Academy because he didn't want to give up his adoptive father Din Djarin. Ezra Bridger is the perfect Jedi to train Grogu as he understands attachment and the traumas associated with it, and can teach Grogu how to balance his emotions and duty to the Force.
Tarre Vizsla and a few other Mandalorians have also become Jedi. This shows that the crossover between the two cultures is not unheard of. While the story of the Mandalorian Knights is considered Legends, there may be instances of Jedi becoming Mandalorians in current canon, as seen with Grogu in The Mandalorian.
