In the end, Judy is reinstated as a member of the Zootopia Police Department. Nick, with a change of heart towards his life, joins as well, becoming the first fox officer. At Nick's police graduation ceremony, Judy herself gives Nick his Z.P.D.

Nick often refers to Judy as "Carrots" as a term of endearment. Sometime after becoming partners, Nick made Judy admit that she loves him, sentiments that he returns.
The pair developed a great friendship over the course of Zootopia and there was a spark between them that could turn into something more. Not to mention that Judy admits she loves Nick at the end of Zootopia, although that could be explained as platonic love and playful banter.
Plus, Judy always seemed to know more than she let on, so it would be unsurprising that Judy knew she would die in Mexico and kept it a secret to protect Jen. Judy was undeniably selfless, and knowing the end was near, she went out on her own terms in the finale of Dead To Me rather than seeing her loved ones suffer.
Judy may also appear in the epilogue scene for whichever ending your path through Cyberpunk 2077 leads to. The nature of this appearance, however, will depend on which ending you want and whether you decide to call her when you have the chance.
