Beetee was wounded by Enobaria, but was chased off by Finnick, while Katniss helped Beetee. However, he ran into a forcefield that would out him in a wheelchair later. Then, District 13 rescued him, Katniss, and Finnick.
No, Beetee does not die in Mockingjay. Since he was injured during the Quarter Quell, he does not enter the battlefield. Instead, he works behind the scenes, designing Katniss' weapons and armor, as well as creating battle plans for District 13.

The victor tributes from 3, 4, 6, 7, 8, and 11 all had knowledge of the plan, which explains why it seemed everyone was working to protect her and Peeta.
They tell her half the tributes were in on it, and finally, all the events of the Quarter Quell, where she was always rescued from danger, make sense. There were also moments throughout the games where it was clear Haymitch was in on the Hunger Games plan.
Beetee, Finnick and Katniss were taken by Plutarch Heavensbee to safety in District 13, while Johanna, Peeta and Enobaria were all taken hostage by the Capitol. Through the work of the District 13 doctors, Beetee managed to survive his injuries.
