Background. As a young boy, Jack would acquire this magical compass from the mystic Tia Dalma for his captain Morgan, then Jack, who was part of his crew, gave Morgan the compass, who would use it in his adventures on the Wicked Wench (the original name of the Black Pearl).
In Dead Man's Chest, it's revealed that Tia Dalma was the one who gave Jack his magic compass. But in this film he is shown receiving it from a dying crew mate during his initial encounter with Salazar.
The first explanation that is given for the strange compass is that Jack was given it as a gift by Tia Dalma. Dalma is later revealed to be the goddess Calypso bound in a human form, so it makes sense that she would have such a supernatural object.
It's notable, then, that when Commodore James Norrington arrests Jack and takes his compass, it points straight at Jack. This is likely because he's got Elizabeth safe by his side, and the one thing he wants more than anything is to see Jack behind bars.
With Will's help, Jack and the crew of the Pearl escaped, and it was on the Pearl that Will asked Jack for his compass. Jack agreed to give Will the compass, if he helped him find the key to the Dead Man's Chest.

Why did Jack's compass not work in Dead Man's Chest?
On the Dead Man's Chest DVD commentary, screenwriters Ted Elliott and Terry Rossio note that the compass only points in Jack's "direction" when Elizabeth holds it, not at Jack himself, and on Isla Cruces, continually points at the location of the Dead Man's Chest, despite Elizabeth believing it is pointing at Jack.

In Pirates of the Caribbean: At World's End, Captain Jack Sparrow used Will's hand to stab Davy Jones' heart. As stated in Dead Man's Chest and At World's End, the Black Pearl is "the only ship that can outrun the Dutchman" and this is evidenced in the maelstrom battle between the two ships in the movies.
When Davy Jones sent the Kraken to attack their ship, Elizabeth passionately kissed Jack. This was a ploy, however, as she had shackled Jack to the ship so that the Kraken would eat him and spare the rest of them. According to an answer to a question from this leaflet from the At World's End DVD: Will's father is not alive—he and all the other crewmen on the Dutchman are in a state between the living and the dead.
