Why did Jango Fett hate Jedi?
Jango hated the Jedi for what they took from him. Perhaps he even hated him for having a home to return to after helping the New Mandalorians take his. Whatever the reason, he hated the Jedi enough to become essential to Palpatine's elaborate plans of genocide.
While Jango Fett was a skilled fighter, his abandonment of "The Way" and his reliance on gadgets and tricks instead of discipline may have contributed to his swift defeat by Mace Windu.

Count Dooku's real name, Dooku, was more fitting than his Sith title, Darth Tyranus, as it speaks to his manipulative nature. Dooku played a crucial role in weakening the Jedi and the Republic from within, planting doubt and eroding trust.
With this came a new version of Jango Fett who now is simply a common bounty hunter who uses Mandalorian armor. This was the accepted canon version of Jango until The Mandalorian changed him back into a Mandalorian.
His doubts about Anakin usually come from a place of insecurity in himself as a Jedi Master, whereas here, he shows a lack of trust in his apprentice and friend. Even more problematic, though, is the fact Obi-Wan explicitly tells Mace that Anakin has an emotional attachment to the Senator of Naboo.
