It is not completely clear whether Gunter is male or female. However, in "The Chamber of Frozen Blades" Gunter lays an egg, which would likely mean it is female. Ice King typically refers to Gunter by masculine pronouns.
With previous episodes like "The Chamber of Frozen Blades" where Gunter was pregnant, and the recent episode "Hoots" where Gunter's dream persona is female, it's safe to assume that Gunter is female.
In reality, Gunter is the primordial cosmic entity known as the Orgalorg and feared as the Breaker of Worlds. In "Come Along With Me," Gunter used the wish-granting abilities of the Ice King's crown to become the Ice Thing, taking on a form resembling that of Urgence Evergreen.
Gunter (variations: Günther, Gunthar) is an old German name made of the words Gund ("Fight," "Battle," "War") and Heri ("Crowd," "Folk") referencing the fact that Ice King calls all his penguins some variant of Gunter, making them his army.
So Orgalorg's biological sex might as well be Orgalorg, but while the penguin Gunter had no recollection of Orgalorg, her dream self presented as a feminine bird. So, with respect to Ooo pronouns, you oughta refer to her as she/her.

What did Gunther give birth to?
Kitten is Gunter's offspring, first seen in "The Chamber of Frozen Blades" in the Ice Kingdom. It appears to be magical in some way, as when it hatches it is glowing and floating and it also has a heart symbol on its forehead.
Also inconclusive is BMO's gender. BMO is a sentient computer in the shape of a walking handheld video game console (see fig. 5). Canonically, BMO has no gender and is referred to throughout the show by both masculine and feminine pronouns.

Orgalorg was once a destroyer of worlds and ruler of solar systems. The monster was defeated by Grob Gob Glob Grod and banished to Earth, taking the form of a penguin after being compressed by the planet's gravity. This monster isn't stronger than other powerful Adventure Time characters because of his weakened form.
This series follows Finn and Jake's gender-swapped counterpart, Fionna the Human and Cake the Cat. The series also features Simon Petrikov, a character who for most of Adventure Time had been well known as the Ice King.
There was one episode in the third season wherein all the characters in the show are gender-swapped – Finn the Human Boy becomes Fionna the Human Girl, and Jake the Dog becomes Cake the Cat (which is an adorable name for a cat, if any of you have new kitties in need of a good moniker).

GOLB was a malevolent entity who is the embodiment of chaos and disorder. He inhabits an unknown dimension and served as the overarching antagonist of Adventure Time and major character in its spin-off series Fionna & Cake.
He fails due to being cast down to Earth by Grod Gob Glob Gob where he forgot his identity and was crushed by the planet's gravity into the form of Gunter, a less powerful penguin-like form. Orgalorg, as Gunter, then survived on Earth for thousands of years until discovering and eventually serving the Ice King.
Grob Gob Glob Grod incapacitated Orgalorg with his sword, and Orgalorg fell to Earth where he was "compressed into a more powerless form." As the grandmother is telling the last line of the story, Orgalorg can be seen gradually transforming into Gunter as he falls to Earth.
In "Imaginary Resources" Jake refers to BMO as his and Finn's "son," implying he sees BMO as his adoptive child. In "Come Along With Me," BMO holds a small Jake and sings Time Adventure to him, proclaiming "I wrote this song for my son Jake!"
Upon arriving at the Tree Fort, Bubble felt the urge to confess their feelings about BMO, and proposed, even though they didn't understand what marriage meant.
