On a thematic level, it represents K's yearning for humanity, a soul, and freewill. He wants to be "born, not made." Also, like the film itself, the wooden toy horse evokes nostalgia. It turns out that the wooden horse memory is Ana's and that it was embedded in K's memory as a safeguard to hide her identity.
Moments later, K recounted an intimate memory of himself as a child. In the memory, K revealed, he was living in an orphanage where a group of children chased after him in order to get a wooden horse toy from him by force. K, determined to stop this from happening, hid the toy inside an abandoned furnace.
This tells us that in truth - at least in the Megalopolis' - people may not have seen real wood. When Dr. Badger tells K that he's willing to manufacture a living horse (Replicant version) and trade it for the piece of wood that K has, it tells us that those items are in fact rare, and therefore valuable.
Joshi about the horse, he said it was "from a tree". That specific thought about the horse, that it was made from a real tree, would have been built into each replicant to have that memory. Upon seeing the horse, if she didn't have the memory of it, she wouldn't be able to tell it was "from a tree".
The horse, with the inscription "6.10. 21", establishes the connection between the dead female replicant who gave birth and died on 6.10. 21, and K himself, implying that the memories were not in fact "implanted" but are rather genuine after all.

Because of this memory, K became convinced that he was Rachael and Deckard's child, but was eventually informed by Freysa that he was not and that the child was female. With this revelation, K soon determined that Stelline was the child. K took Deckard to Stelline's lab as she interacted with a snowfall hologram.
KD6-3.7 ("K" for short) is a Nexus-9 replicant model created to obey and works as a "blade runner" for the LAPD, hunting down and "retiring" rogue older model replicants.

She weeps when they suffer and is heartbroken when they die, but is incapable of acting to stop either. Like so many people who feel helpless in today's society, Luv is a prisoner to her programming. Luv's first very-human tears come as she witnesses a murder.
Doctor Ana Stelline (Carla Juri) designs memories for the Nexus-9 Replicants but is forced to live in a bubble because of her condition. She's in no condition to lead any sort of revolution or lead her “people.” In fact, she's a key point in the machinery that allows them to be produced and enslaved.

Her name is Joi and she is an illusion in every sense, right down to her holographic countenance made up of ones and zeroes. But in the world of Blade Runner 2049, nobody is perfect, and she is both the fantasy and reality of Ridley Scott's haunted future made flesh. Digitally speaking, of course.
His perfect match would disobey her programming to help him. Regardless of your opinions on the above, I do think that the movie clearly says that Joi's love for K was programmed/created by a corporation. But he loves her back.
Joi's last words to K before her emanator is destroyed by Luv, killing her. I love you. . She is an artificially intelligent hologram who serves as K's domestic partner.
Replicant KD6-3.7 was "born" sometime during the mid-late 2030's through Wallace Corporation and was implanted with false memories to keep him in bay before immediately putting him through intense training before finally becoming a Blade Runner for The Los Angeles Police Department.
Our hero, the replicant police officer K (Ryan Gosling), was going to learn that he was the secret child of the first Blade Runner's hero, Rick Deckard (Harrison Ford), and his replicant lover Rachael (Sean Young).
In the final moments of the film, K collapses in the snow and dies from his wounds sustained in battle, but not before fulfilling his mission and revealing to Deckard the truth about his own past. The film ends with Deckard reuniting with his long-lost daughter, Ana Stelline, in a poignant and emotional scene.
Joi wins the audience's hearts with her kindness and sensitivity before her arc ends in tragedy. After K takes her to Las Vegas in the emanator unit to track down Rick Deckard (Harrison Ford's original Blade Runner character), the villainous Luv arrives to wipe Joi from existence, abduct Deckard, and leave K for dead.
